b. buy eggs and bacon; make mayo@ home with baconfat
c. don't forget 2 add 'liquid smoke' (we have it in the pandora) so it tastes like baconnaise.
Bacon Mayonnaise About 1/2 cup
Bacon Mayonnaise About 1/2 cup
1 egg yolk (we use whole egg, or equiv egg product)
3/4 teaspoon Dijon mustard
1 teaspoon freshly squeezed lemon juice
1/2 cup liquid bacon fat
dash liquid smoke
Combine egg yolk, mustard and lemon juice in the small bowl of a food processor or in a blender and process to mix. Season with salt and pepper. Have the bacon fat liquid, but not hot. With the machine running, gradually add bacon fat until mixture starts to stiffen and emulsify, about 2 mins. Once it starts to emulsify, you can add the fat more quickly. Taste and adjust seasoning.
