we (ok only me) suffer with beet addiction. beets are so sturdy, so 'eternally' useful::: so red and rowdy. cooked beets left 2 their own devices in your fridge will become almost like cheap wine; their liquid will become syrup and appear edible::: DONOTEATtHEM.

we still harbor beets in our home.
