jasmine risotto


traditional risotto is made with arborio rice. i didn't have it at the time i made this dish; in fact, my intent was not risotto. i used my favorite jasmine rice; added peanut butter, marsala and beet poison to water. the ratio was basic: 1 cup rice/1.75 cup liquid. maybe liquid was more like 2 cups. i never rinse my rice. i follow basic instructions for white long-grain rice. using more liquid produces a risotto-like finish. this formula is definitely not a sub for risotto the 'real way'. it's my way that day.
